Wicked Popcorn

It’s getting crazy here.

Lots of lists, lots of shopping trips and last minute preparations as we prepare two children for college.

The dining room table is disappearing under the load of dorm essentials that must be bought for the freshman boy. Sous Chef needs little assistance as she stores most of her items off-campus in storage and needs only a few additional items for her senior year. How many little plastic storage items do you need? We bought a lot. Should you buy the clip-on study lamp or the desk lamp? I don’t know, so we bought both. See where we are headed here, and why the top of the dining room table is no longer visible!

And if you think that all this college stuff is crazy wait til you hear about our new favorite snack. Popcorn with bold, spicy flavors. Whaaat??? Yep, you heard it here. Popcorn with chili powder, black pepper and other savory spices.

A few weeks ago my youngest was hungry (as usual) and decided to look through all the cookbooks to find a snack to make. He started going through the bookshelf and happened upon Young and Hungry by Dave Lieberman. Quite an appropriate book since my fourteen year old is young and always hungry!! I can see why he was drawn to the title.

I had the pleasure of meeting Dave Lieberman several years ago when he was in the Richmond SLT store (where I worked) for a book signing. He was gracious and kind, young and cute. As you can imagine, there were a lot of cooking fans at the store to meet him. He made every single one feel like they were the only fan in the room. I really liked him for that. Having worked with many chefs at different book signings, it’s not a personality trait that they all share.

This is a cookbook that every young adult, new cook, and family cook can relate to. The recipes are young and hip – a lot like the author. Just imagine recipes for casual dinner parties, college tailgates and throw-together family friendly meals. It was published in 2005, and he has since published another cookbook, Dave’s Dinners: A Fresh Approach To Home Cooked Meals. This is definitely a fun cookbook to own.

Set aside any preconceived popcorn notions you might have about this recipe, this popcorn will knock your socks off! (Did I really just say that?) OK, let’s try that again, you will love it!!!

Wicked Popcorn Ingredients:

1/2 cup popcorn kernels
2 tablespoons canola oil
2 tablespoons butter
2 teaspoons spice mix (see below)

Dave’s Spice Mix:

¾ teaspoon dried oregano
1 teaspoon salt
1 teaspoon paprika
1 teaspoon chili powder
½ teaspoon garlic powder
½ teaspoon ground black pepper

Prepare popcorn in a stove-top popping machine. (See notes below.) Pour popcorn into a large bowl. Melt butter and drizzle over popcorn. Sprinkle spice mixture over popcorn, stirring to mix evenly.

Kitchenarian Notes: We use a Whirly-Pop stove-top popcorn maker in our kitchen. The best popcorn maker ever!! We love this. It requires very little oil and the popcorn is always delicious. I think everyone should have one! Dave’s recipe calls for microwave popcorn. If you use microwave popcorn, you may want to use a little less spice mix because it will make a smaller amount.

Gimme oh gimme :) We call this masala popcorn and I make it a lot at my home – although its been a while – your post is all too tempting :)

We’ve made this almost every day for the past week. It is so addictive! Thanks for the comment. I would love to know what spices you put in your masala popcorn.

Here too…M.’s college stuff has taken over the spare bedroom. I’m thinking younger brother is going to not make the drive with us because there simply won’t be any room in the car! I love popcorn…what a great spicy crunchy snack. I don’t think there is a type of popcorn we wouldn’t eat…and like. Good luck to you and your college crew!

Sarah, While this is difficult on us moms, it is so exciting to watch as our children take this next big step. It does seem to require a lot of stuff though!! Good luck to your family, for your daughter leaving on this great journey and for those still at home feeling a little left behind. Keep me posted on how she is doing!!

Oh I have been enjoying all sorts of spiced popcorn this summer. Taking something wonderful to a whole other level. I cannot wait to try this one out.
