Seven Summer Salads

I wish I could say I have been away on a remote tropical island vacation or that I have been on a grand European get-away, but the fact is I have been working. I’ve been away from my blog for a bit, but I am back. There has been some behind the scenes work going on as well and I will be launching a new website soon, but more on that later.

Summer is finally here for my entire family. The last of my children, my older son, just finished his last exam this past Monday and now all three children are in a constant state of motion all around the house coming and going, eating and eating some more.

Even though I haven’t been writing here, I have been trying to keep up with all of my favorite blogs to see what everyone is cooking. I have been in the mood for salads since the temperature has been hovering around 100 degrees over the past week. At the moment and for the foreseeable future, I am all about refreshing summer salads and anything else that does not require an oven.

Here are seven great summer salad recipes I spotted recently. Why seven? I just love the alliteration, but you probably knew that already. Enjoy!

It was 100 degrees two days ago… it is barely 60 right now. Crazy!

I love the chicken salad from ‘three many cooks’… sounds fantastic!

Thanks for mentioning my salad on your list! I had already bookmarked the Thai Mango Salad with Grilled Shrimp – although no mango for me 🙁 – and the Crunchy Peanut Slaw, but I am glad to see the others too since I have had salad on the mind too.

I know – the weather in Georgia has been crazy hot for at least a month now. I have no desire to turn on my oven during the day. What a great list – thanks for taking the time to put it together

What a great list! Do you think that quinoa would work in the first salad instead of the wheat berries?

The original recipe called for farro, and the blogger replaced it with barley and then suggested wheat berries for the next time. I think quiona is an easy replacement. Quinoa is such a superfood; great idea. At your suggestion, I am going to try it that way myself.

I have a really hard time eating cold salads in the winter but come summer that is all I crave. Thanks for the sugguestions and the veggie pics are beautiful. Love farmer’s markets!
