Monday’s Muffin: Oatmeal Raisin

I have been looking forward to this week for a couple of reasons. First reason: I am on vacation with my family. We are spending time at the beach with friends.  The second reason I am excited is because Kate from Diethood so graciously agreed to share a muffin with you today. I remember how excited I would get when I was young and I brought a new friend home from school and introduced her to my family; that is how I feel today.

Kate’s blog was one of the first blogs I started reading after joining foodbuzz, an on-line food blog community.  I enjoyed her humor and sweet style of writing. Some of my favorite posts are when she talks about her homeland, Macedonia, and shares family recipes. Check out her post she wrote this past winter about tolumbi. Since I know it is Monday, and you are really thinking about muffins, I am going to turn it over to Kate…

Hello Everyone!

My name is Katerina (Kate), author of the blog Diethood, and I am beyond thrilled to be a guest here!  The Kitchenarian is one of my very favorite blogs, and when I received the invite for a guest post, I thought, “Are you kidding me?! Will I? OF COURSE I WILL!”

She’s wonderful, she’s supportive, and she’s a great friend!  Thank you, Kitch (that’s what I call you in my head), for having me here – I really appreciate it.

It’s no secret that The Kitchenarian loves muffins. She’s even dedicated an entire day to them. 🙂 My favorite of hers, thus far, are the Dried Cherry & White Chocolate Chip Muffins… talk about DEEEE-LISH!  Having tried a few of her wonderful muffin creations, (the blueberry, the carrot cake, etc…) I was sorta, kinda feelin’ a bit intimidated; What muffin recipe do I use for the Monday Muffin queen!?!  Three muffin recipes later, I got it!

Yes… I made 3 dozen muffins this past week – banana, peanut butter, and oatmeal raisin. I have the pictures to prove it. And my husband’s co-worker’s bellies.  Oatmeal raisin won! My daughter, who is not even two years old yet, decided that this was the muffin. I trust her opinion. Kids are always honest, especially about food. 🙂

Oatmeal Raisin Muffins

(Makes 12 muffins)

You will need:
1 cup rolled oats
1 cup non-fat plain yogurt
¾ cup all-purpose flour
½ teaspoon baking powder
¾ teaspoons baking soda
¼ teaspoon salt
1 teaspoon cinnamon
2 eggs
1 teaspoon vanilla
1/3 cup brown sugar
1/3 cup vegetable oil
1 cup raisins (if you prefer less, you can use ½ cup)

Oats, toasted and chopped


Preheat oven to 400.  Place the oats and the yogurt in a bowl and let stand for about 30 minutes.

Sift together the flour, baking powder, baking soda, salt, and cinnamon.  In a separate bowl, lightly beat the eggs.  Stir the eggs into the yogurt mixture; mix in the vanilla, sugar, and vegetable oil.

Pour the yogurt mixture into the flour mixture and stir just until combined. Do not overmix.  Fold in the raisins.  Bake for 15 to 20 minutes.  When done, drizzle honey over each muffin and top with the toasted oats.  Let cool.

These look heavenly. I seriously want to make these muffins now, or just jump into the screen and grab it. Wow, I wish I had access to all my baking stuff right now to just make this.
