Monday’s Muffin: Gingerbread Muffins with Lemon Glaze

I love fall. The colors, the flavors, the cool temperatures….all of it.

One of my family’s favorite fall treats is gingerbread, so I decided to make gingerbread muffins as my comeback recipe. I’ve been gone for a bit – caught up in work, college visits, school sports and fall gardening. It feels so good to be back here sharing recipes from my kitchen.

I was so excited to get in the kitchen and bake these muffins. I knew these would be a hit before I even started and I was right. My family loved them. The lemon glaze adds the perfect sweetness to these cake-like muffins.  This recipe was adapted from one at

2 3/4 cups all purpose flour
2 1/4 teaspoons baking soda
1 tablespoon plus 1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup plus 2 tablespoons sugar
2 large eggs
3/4 cup mild-flavored light molasses
1 cup cold water

Lemon Glaze:
1 3/4 cups powdered sugar
5 tablespoons fresh lemon juice

Preheat oven to 350 degrees. Grease 18standard muffin cups orline with paper liners. Whisk together the flour, baking soda, ginger, cinnamon, cloves and salt in medium bowl.

In a separate bowl, whisk unsalted butter and sugar in large bowl to blend. Add large eggs and molasses. Mix until blended then pour into bowl with dry ingredients, beating until blended. Gradually add cold water and mix until incorporated. Divide batter equally among muffin cups.  Bake gingerbread until tester inserted into center comes out clean, about 17 to 20 minutes.

For lemon glaze: Whisk powdered sugar and lemon juice in small bowl until smooth. Spoon glaze over tops of warm muffins, right before serving.

I love gingerbread (but can’t indulge due to a cinnamon allergy). Before I had the allergy, tho….I just loved it. I bet it’s AMAZING with lemon glaze! Brilliant idea!

Gingerbread and citrus do make for a wonderful treat! I am making up for lost time when growing up-we never had gingerbread anything. Can’t understand why-it has such delicious flavor. Your muffins would make for a great snack or breakfast-yum! Glad you shared this.

I made gingerbread with a lemon sauce last year, however, not in a muffin form. This is perfect! Looks absolutely delicious!
