From the Recipe Box: Peanut Butter Chewy Cookies

During this winter holiday my family has not exactly stayed put in our home, and we traveling chefs have dealt with inferior kitchen equipment and lacking grocery stores that challenged our work, putting us to the ultimate test. I am glad to say that we did succeed, but there’s no place like your home kitchen.

The other day, the Kitchenarian mentioned to me that I should make a long-forgotten favorite cookie, these Chocolate Peanut Butter Oatmeal drop cookies. I smiled at the suggestion; I am always one to appease my nostalgia, and these cookies always sweep me up into happy childhood memories. I remember watching the Kitchenarian drop rows and rows of these little cookies as my brother and I sat waiting for them to cool.

This time around, I was the head chef. With the help of my youngest brother, the two of us whipped up a batch of these simple yet delicious no-bake cookies.


2 cups sugar
½ cup whole milk
1 stick butter
4 tablespoons cocoa
½ cup peanut butter
1 teaspoon vanilla
3 cups quick cooking oatmeal

Melt sugar, milk, butter and cocoa together in a saucepan. Boil for one minute. Remove from stove top and add peanut butter, vanilla and oatmeal. Mix together well. Drop by a spoon onto aluminum foil or parchment paper. Let cool.

LOVE, love these “no bake” cookies! I never make them as my family doesn’t feel the same way…and I’d have to eat the whole batch myself!

I need to try some “no bake” cookies one of these days, and I’m thinking this recipe sounds perfect. I love the simplicity of both the ingredients and the directions.

My mom made this for a party we had years ago. Some of the other treats on the table were rich and difficult to make, but this plate was the first to be cleaned! I had forgotten about them. Thank you!
