I love espresso. I love a Starbucks latte. I love coffee ice cream. I love Kahlua. So what happens when you combine all of these amazing flavors together. What do you get? The perfect coffee summer treat!
Summer is about kicking back and relaxing a bit. I definitely believe that recipes should really coincide with the summer attitude – quick ,easy and fresh. OUT are the casseroles and slow cooking stews and IN are the fresh salads, anything grilled and, of course, frozen delights.
Here is a super simple popsicle recipe for the children at heart. Perfect for your next outdoor grilling party, make some fun popsicles for the kids and then surprise the parents with their own frozen cocktail treat. Recipe adapted from food.com
Ingredients:
2 cups brewed espresso
1/3 cup chocolate syrup
6 tablespoons sugar
1/4 teaspoon cinnamon
2 teaspoons vanilla extract
1/4 cup heavy whipping cream
3 tablespoons Kahlua
Mix all the ingredients together and pour into popsicle molds. Freeze several hours or overnight until solid.

This is a nice alternative to all the fruit pops that are around. I like everything in this and the fact that it is ice cold makes it all the better. Thanks for sharing this frosty treat!

I could switch to one of these for breakfast instead of my cup of coffee. Of couse, the Kahlua might make me want to go back to bed, but what a great way to start the day!

I bought those popsicle molds years ago from Williams-Sonoma. I know that Sur la Table has some fun popsicle molds too!
