From the Recipe Box: Chocolate/Toffee Butter Cookies

While I love having the sunlight last just a bit longer during the day, I do not like losing an hour out of my day. I feel like I have a time-change hangover for several days every time we decide to spring forward or fall back. With that said, I am already looking forward to warmer days and brighter skies. I must confess though it has made me a bit lazy today.

I knew I wanted to bake something and with Sous Chef home, we had talked about it all weekend, but neither one of us seemed to get in the kitchen to get things rolling. Finally, this afternoon I moseyed into the kitchen to bake up some cookies.

I remembered seeing a recipe on the blog, Goddess of Baking, that appealed to my love of butter. The Goddess, Merlot Dalton, baked a beautiful adaptation of a Land O’Lakes cookie recipe. I tweaked her recipe slightly by using milk chocolate toffee bits and then sprinkling extra toffee bits on top. Easy? Yes. Delicious? Definitely.

Ingredients:

1 cup sugar
1 cup (2 sticks) unsalted butter, room temperature
2 eggs
1 teaspoon vanilla
2 ½ cups flour
1 teaspoon baking soda
½ teaspoon salt
1 package of Heath Milk Chocolate Toffee Bits (8 ounce bag)

Preheat oven to 350 degrees. Cream the butter and sugar in a large bowl.  Beat in the eggs and vanilla until creamy. Add the flour, baking soda and salt, mix until  combined.  Be sure to scrape the bowl. Stir in one cup of the toffee bits, setting aside the remaining 1/3 cup. Roll the dough into balls and place on a cookie sheet lined with silpat. Flatten cookies slightly and then press the toffee and chocolate bits on top. Bake for 10- 12 minutes, or until lightly browned. Do not over bake; these should be very soft. Cool for a few minutes and move to a cooling rack. Makes about 4 dozen cookies, depending upon how much dough you eat while baking them.

I’m jealous… don’t think I’ve seen Heath toffee bits around here. I’ll have to call to my friend in Boston and tell her to send me some! Your cookies look scrumptious.

Can I confess, I actually like losing the hour of the day. Sundays are often tough with three little ones and one less hour makes it that much easier! Besides, my littlest one is sick and VERY cranky right now.
But I bet I could have cheered her up with one of your awesome cookies!

I completely understand about the time and light change. I couldn’t get motivated to bake anything new, so I just made the last two ffwD March recipes instead! Your cookies look delicious!
