From the Recipe Box: Cheap Dates

I have seen recipes for dates stuffed with parmesan cheese, blue cheese and cream cheese, but this recipe is different and delicious! I first enjoyed this appetizer years ago at a Sur la Table corporate function, so I will give them the credit for it.

This recipe is a prime example that cooking doesn’t need to be complicated; find the right combination of flavors, keep it simple and let the food speak for itself.


Medjool dates
Chorizo sausage – fresh chorizo, not cured smoked chorizo

Cook the chorizo sausage, drain, and let cool. Remove the pits from the medjool dates. Fill the dates with chorizo sausage, wrap with bacon and cook at 375 – 400 degrees until the bacon is crisp and cooked.

Perfect appetizers for parties, picnics or tailgates.
