From the Bar: Irish Cream

So I am feelin’ a bit Irish this week and what better way to celebrate the day than with a drink of Irish whiskey. I don’t think I have any real Irish blood in me – I don’t like corned beef or cabbage and I am not a big potato fan, but they say that on March 17th everyone is Irish!  One of my favorite after dinner drinks is Bailey’s Irish Cream, so I decided to make my own in honor of St. Patrick’s Day.

I read multiple recipes and couldn’t quite settle on one; so I mixed and poured and tasted and tweaked and made up my own Irish concoction. In the good ole Irish tradition, I didn’t skimp on the whiskey and so it has a bit of an Irish bite to it. Authentic Irish Cream is very thick, but you can certainly add some whole milk to thin it out if you prefer.

Ingredients:

1 cup good Irish whiskey – I used Jameson’s
1 cup heavy whipping cream
1 (14 oz) can of sweetened condensed milk
1 packet Starbucks Via instant espresso (2 teaspoons)
1 tablespoon cocoa powder
1 teaspoon vanilla

Mix all ingredients together in a blender and blend until thick and smooth. Refrigerate immediately.  This will keep for several weeks in the refrigerator. Store it in a container that you can mix well before pouring.

I keep a bottle of Jamesons in the cabinet… alas, its just for drinking neat 🙂

I’ve tried to work up an Irish cream for my mom, it was her fav liqueur until she became deathly allergic to chocolate and severely lactose intolerant. I haven’t been successful…yet

I love Bailey’s, and never thought to make it on my own. Back in college once, I had three 15 page papers due in a matter of days and didn’t know how on earth I was going to have the time to finish them well. I was in the store while I was thinking this, and noticed an enormous bottle of Bailey’s right next to me. It was meant to be. Much coffee and Bailey’s later, my papers were done (well, at that) and I was on my way to graduation.
