Corn and Edamame Salsa – A Guest Post

I know it’s been a while since I have been here. So sorry for my absence.  Our family was away for Labor Day with friends. Upon my return home,  I have been getting my youngest prepared for his new school and working on some college deadlines with my oldest son.  It’s been busy, busy around here.  I am so excited because today I am over at JL’s blog, JL Goes Vegan.

JL was one of my guest bloggers during Vegan Week and she has asked me to share a recipe and talk about my vegan experience with her readers.  I am so excited to share one of my favorite new recipes that I prepared while I was vegan.

I’m such a big fan of anything with edamame! I’ve never tried it in a salsa though! It looks delicious!
