Chocolate Cupcakes with Bailey’s Frosting

Happy St. Patty’s Day, everyone!

I thought that the holiday festivities this weekend would be a great way to get back into the kitchen now that I am home on Spring Break. Having recently turned 21, I knew that I had to make this a true Irish treat. Last year the Kitchenarian made some awesome Irish Cream, and so I, too, had to find something festive for the occasion. Baking is what I love best and thus, it was an easy choice to turn to these sweet treats.

There are lots of different St. Patrick’s Day themed cupcake recipes out there, and I sifted through many of them in order to find what I wanted. I ended up choosing a simple chocolate cupcake recipe and then found a recipe for Bailey’s Irish Cream frosting. What a delicious combo! The frosting was really what made this festive treat so incredible. You could use different types of cupcakes, including coffee, vanilla, or even Bailey’s cupcakes too. What cupcakes would you bake for St. Patty’s Day?


Chocolate Cupcake:
1 1/3 cups all-purpose flour
¼ teaspoon baking soda
2 teaspoons baking powder
¾ cup unsweetened cocoa powder
1/8 teaspoon salt
3 tablespoons butter, softened
1 ½ cups white sugar
2 eggs
¾ teaspoon vanilla extract
1 cup milk

Preheat oven to 350 degrees. Sift together the flour, baking soda, baking powder, cocoa powder, and salt. In mixer, cream the butter and sugar together. Then add eggs one at a time, and vanilla. Add in the flour mixture alternatively with the cup of milk. Fill muffin cups ¾ full. Bake for 15 to 20 minutes.
