Occasionally, I work at The Husband’s office.
Sometimes I help him with a few things and sometimes I just need a change of scenery to work on my own writing projects. What does he do, you ask? Well, at home we call him a computer guru, but I guess technically he is a web developer. Recently, I was working in his office and we were trying to decide what to do about dinner. After a fairly lengthy discussion, we decided not to eat out, but rather grab something from Fresh Market on the way home. To be honest, I prefer Friday night dinners at home. It’s more relaxing and I can enjoy that second glass of wine without worrying who will be driving.
On this particular night, it was late and we were hungry. Yes, I know, you should never go to the grocery store when you are hungry, but there we were, wanting everything and having a hard time deciding. We finally settled on a smorgasbord of brown rice sushi, some bruschetta and two small containers of Fresh Market’s pre-made salads. One was a Thai peanut salad and the other was an Asian cole slaw. Both of these salads were so delicious that within a day or two I was on the internet looking for the recipes.
I couldn’t really find a copycat recipe for the salads we had eaten, but I did come up with this tasty Asian inspired slaw. It’s sort of a combination of several recipes that I saw on-line. This is a great summer side dish – quick to make and delicious.
Ingredients:
1 package (10 ounces) coleslaw mix
6-8 large radishes, grated
1/2 cup snow peas
1/2 cup carrots, grated
4 tablespoons rice vinegar
2 tablespoons canola oil
1 tablespoon sesame oil
2 tablespoons soy sauce
4 teaspoons sugar
1 1/2 teaspoons fresh ginger, minced
3 teaspoons sesame seeds
1/2 teaspoon crushed red pepper
Toss the coleslaw mix, radishes, snow peas and carrots in a medium bowl. Mix remaining ingredients until well blended. Pour dressing over slaw, toss together, cover and refrigerate for one hour before serving.
Kitchenarian Notes:
You can add a lot of different ingredients to this slaw: red cabbage, cucumbers, red peppers, almonds or peanuts, and even cilantro. Just add your favorites!

It appears like you were able to restrain yourself. If I went to the supermarket hungry, I’d leave with a bunch of snack food. Congratulations on making the foodbuzz Top 9!

This is a wonderful salad. The Asian touch makes it much more interesting than regular cole slaw.
